4 chicken drumsticks and 4 chicken thighs

1 cup white vinegar

1 cup soy sauce

3 bay leaves

2 tbsp brown sugar

1 tbsp peppercorns

1 green chili pepper

1 head of garlic, cut in half through the equator

½ medium white onion, chopped

1 cup uncooked rice


Salt and pepper

Instructions: Start the rice according to package directions. While the rice is cooking, season the chicken with salt and pepper and brown in oil a large Dutch oven. Depending on the size of your Dutch oven, you will more than likely need to do this in batches. You're only browning it at this point; it will finish cooking at the end. When all chicken pieces are browned, add all other ingredients to the pot, and bring to a simmer. Add chicken to simmering sauce and let cook for 20-30 minutes or until cooked through.
